Instructions
- Wash the cucumbers thoroughly under cold water and slice them thinly.
- Combine the vinegar, sugar, soy sauce, sesame oil, garlic, ginger, and red pepper flakes in a bowl and whisk until the sugar dissolves.
- Add the cucumber slices to the bowl, tossing gently in the marinade.
- Transfer the mixture to a clean jar with a tight lid, pressing down to ensure cucumbers are submerged.
- Allow the cucumbers to marinate for at least 30 minutes at room temperature or refrigerate for a more intense flavor.
Notes
