Ingredients
Scale
- 2 cups cooked chicken, shredded or diced
- 4 cups mixed greens (like romaine, kale, or spinach)
- 1 cup shredded carrots
- 1 cup red cabbage, shredded
- 1 cup cucumber, sliced
- 1/2 cup bell pepper, thinly sliced
- 1/4 cup green onions, sliced
- 1/2 cup roasted almonds or cashews, lightly chopped
- 1/4 cup sesame seeds (optional)
- 1/4 cup cilantro, roughly chopped
- 1/4 cup soy sauce or tamari
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon ginger, grated
- 1 clove garlic, minced
- 1 tablespoon lime juice
Instructions
- Begin by preparing all the ingredients. Shred or dice the cooked chicken and chop your vegetables into bite-sized pieces.
- In a large bowl, mix together the mixed greens, shredded carrots, red cabbage, cucumber, and bell pepper.
- Add the cooked chicken on top of the salad mixture.
- In a separate small bowl, whisk together all the dressing ingredients.
- Drizzle the homemade dressing over the salad just before serving, tossing gently to coat everything evenly.
- Top the salad with chopped nuts and sesame seeds for added crunch and nutty flavor.
Notes
To lighten the salad, consider swapping chicken for shrimp or tofu, and reduce the honey for a low-sugar dressing.
