Ingredients

  • 3 medium-sized apples (such as Honeycrisp or Fuji), diced
  • 1 cup pecans, roughly chopped
  • 1 cup grapes, halved
  • 1 cup celery, chopped
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons honey (adjust to taste)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Start by prepping your apples. Wash them thoroughly and dice them into bite-sized pieces.
  2. Next, chop the celery into small pieces.
  3. Take your grapes, and slice them in half.
  4. In a mixing bowl, combine your chopped apples, grapes, celery, and dried cranberries or raisins.
  5. In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, vanilla, and a pinch of salt until well blended.
  6. Pour the dressing over the salad mixture.
  7. Add the chopped pecans last, folding them in carefully.
  8. Cover the salad and chill in the refrigerator for about 30 minutes.

Notes

For a lighter, vegan version, substitute Greek yogurt with a dairy-free yogurt and use maple syrup instead of honey.
