- 2 large zucchinis
- 1 cup breadcrumbs (Panko)
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray or olive oil for drizzling
Instructions
- Start by washing and drying the zucchinis thoroughly. Cut off the ends, then slice each zucchini into long, thin strips, about 1/4 inch thick.
- Set up a breading station. In one bowl, beat the eggs. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Dip each zucchini strip first into the egg, allowing excess to drip off, and then dredge it in the breadcrumb mixture.
- Preheat your air fryer to 400°F (200°C). Once preheated, place the zucchini fries in a single layer in the air fryer basket.
- Spray the zucchini fries lightly with cooking spray or drizzle with olive oil.
- Cook the fries for about 12-15 minutes, shaking the basket halfway through the cooking time.
- When they’re golden and crunchy, remove them from the air fryer and let them cool for a minute before serving.
Notes
For gluten-free options, substitute regular breadcrumbs with almond flour. For vegan version, use flax eggs instead of eggs.
