Description
Perfectly crispy and tender air fryer squash seasoned with aromatic herbs and spices. Ready in just 15 minutes, this healthy side dish features golden-brown edges and a melt-in-your-mouth interior.
Ingredients
Scale
- 2 medium yellow squash or zucchini (about 1 pound)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- 1. Wash and dry the squash thoroughly. Cut into uniform 1/4 to 1/2-inch thick rounds or half-moons.
- 2. Pat the cut squash pieces dry with paper towels to remove excess moisture.
- 3. In a large bowl, toss the squash with olive oil, garlic powder, onion powder, Italian seasoning, salt, and black pepper until evenly coated.
- 4. Preheat your air fryer to 380°F for 2-3 minutes.
- 5. Arrange squash pieces in a single layer in the air fryer basket, avoiding overcrowding. Cook in batches if necessary.
- 6. Air fry for 10-12 minutes, shaking the basket or flipping the pieces halfway through cooking.
- 7. Check for doneness at the 8-minute mark. The squash should be tender and golden-brown with crispy edges.
- 8. If using, sprinkle Parmesan cheese over the hot squash immediately after removing from the air fryer.
- 9. Serve warm and enjoy immediately for the best texture and flavor.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the air fryer at 350°F for 3-5 minutes to restore crispiness. For extra crispy squash, increase temperature to 400°F during the last 2-3 minutes of cooking. This recipe works well with various summer squash varieties including zucchini, yellow squash, and pattypan.
