These scrumptious Air Fryer Rice Paper Noodle Rolls are fresh, healthy, and a tad crispy, perfect for impressing family and friends.
Ingredients
- Rice paper wrappers
- Rice noodles (or quinoa noodles for a gluten-free option)
- Bell peppers, julienned
- Carrots, shredded
- Cucumbers, thinly sliced
- Lettuce leaves
- Fresh mint
- Fresh cilantro
- Cooked shrimp (or tofu for a vegetarian version)
- Cooked and sliced chicken breast (or turkey or beef)
- Soy sauce or gluten-free soy sauce
- Dipping sauce of your choice (peanut sauce or spicy chili sauce)
Instructions
- Prepare the rice noodles according to package instructions. Drain and set aside.
- Soak the rice paper wrappers in warm water until pliable, about 10-20 seconds.
- Lay the softened rice paper on a flat surface. Place a small amount of rice noodles in the center, followed by fresh vegetables, herbs, and protein.
- Fold in the sides and roll the wrapper tightly from the bottom up.
- Preheat your air fryer to 375°F (190°C) and lightly spray the rolls with olive oil.
- Place each roll in the air fryer basket without overcrowding. Air fry for about 8-10 minutes until golden brown and crispy.
- Serve the rolls with soy sauce or your favorite dipping sauce, and optionally sprinkle with fresh herbs.
Notes
Feel free to get creative with fillings – avocado, bean sprouts, or favorite nuts can add extra crunch.
