Description

Tender air-fried salmon bites glazed with homemade teriyaki sauce, served over fluffy rice with fresh vegetables for a quick, healthy, and delicious meal.


Ingredients

  • 1.5 pounds fresh salmon fillets (skin removed)
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger (minced)
  • 3 cloves garlic (minced)
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 4 cups cooked white or brown rice
  • 1 medium cucumber (sliced)
  • 1 cup edamame (shelled)
  • 1/2 cup shredded carrots
  • 3 stalks green onions (chopped)
  • 2 tablespoons sesame seeds
  • 1 large avocado (sliced, optional)

Instructions

  1. 1. Whisk together soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, and cornstarch in a medium bowl until smooth.
  2. 2. Cut salmon into 1.5-inch cubes, removing any skin or bones. Add to marinade and toss to coat. Refrigerate for 15-30 minutes.
  3. 3. Preheat air fryer to 400°F for 3 minutes.
  4. 4. Arrange marinated salmon bites in a single layer in the air fryer basket, leaving space between pieces.
  5. 5. Cook for 8-10 minutes, shaking the basket halfway through, until salmon reaches 145°F internal temperature and edges are caramelized.
  6. 6. While salmon cooks, prepare rice according to package directions if not already cooked.
  7. 7. Slice cucumber, prepare edamame, shred carrots, and chop green onions.
  8. 8. To assemble bowls, add rice as the base, arrange salmon bites on one section, and place vegetables in separate sections around the bowl.
  9. 9. Drizzle with remaining teriyaki sauce, then sprinkle with sesame seeds and green onions. Add avocado slices if desired.
  10. 10. Serve immediately while salmon is hot and enjoy.

Notes

Store components separately in airtight containers. Salmon keeps for 2 days, rice for 4-5 days, and vegetables for 3-4 days. Reheat salmon in air fryer at 350°F for 3-4 minutes. Best assembled fresh before serving. For meal prep, keep sauce separate and add just before eating.
