Description

A quick and refreshing salad that balances the zing of lemon with savory notes of Parmesan cheese.


Ingredients

  • 1 head Fresh romaine or butter lettuce
  • 1/2 cup Parmesan cheese, shaved or grated
  • Juice of 1 large Fresh lemon
  • 1/4 cup Olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: Cherry tomatoes, halved
  • Optional: Croutons
  • Optional: Chopped parsley, for garnish

Instructions

  1. Start off by rinsing your lettuce thoroughly under cool water. Pat it dry with a clean kitchen towel or salad spinner.
  2. Tear the lettuce into bite-sized pieces and place them in a large salad bowl.
  3. In a separate small bowl, whisk together the lemon juice and olive oil until emulsified.
  4. Season the dressing with salt and black pepper. Adjust according to your preference.
  5. Pour the dressing over the lettuce and gently toss to coat.
  6. Add the Parmesan cheese and give it one last gentle toss. Top with optional cherry tomatoes, croutons, and chopped parsley.

Notes

For variations, you can substitute lettuce with spinach or arugula, and Parmesan with vegan cheese if desired.
