  2. In the same blender or bowl, add the peeled ripe banana. Next, add the two eggs. Blend everything together until it forms a smooth batter.
  3. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray or a small amount of butter.
  4. Pour about a quarter cup of the batter onto the skillet for each pancake. Cook until bubbles form, about 2-3 minutes, then flip and cook for another 2-3 minutes.
  5. Repeat the process until all the batter is used up, yielding around 4-6 pancakes.
